Wellthy Tastings March - PB&J Energy Bars

March is National Nutrition Month which spotlights the importance of nutrition, health, and the many joys of wholesome eating. This year’s theme is “Beyond the Table” and what better way to celebrate it than making PB & J Energy Bars for some on the go fuel?! PB & J “anything” is sure to be a wholesome and healthy snack because it is packed with nutrients like protein, fiber, and healthy fats. Making PB & J into an energy bar - now that's the next level. Energy bars can help satisfy hunger and keep your energy up all day long.

Here’s what you’ll need:

  • ½ cup Cashews
  • 3 cups medjool dates, pitted
  • ¾ cup PB2 powder
  • ½ cup water
  • ¼ cup dried cranberries
  • 2 tbsp chia seeds
  • ½ tsp salt

Directions:

  1. Place cashews in a food processor, and process until finely chopped. Add dates and process until well combined.
  2. Mix PB2 powder and water together until combined. Add the mixture, cranberries, chia seeds, and sea salt. Pulse until well combined, scraping the sides as needed. The consistency should firm, yet easy to mold.
  3. Firmly press mixture into a parchment-lined baking pan. Cover and refrigerate for 1 hour.
  4. Cut into bars and enjoy them now or pack them up to go!
