Wellthy Tastings February: Mardi Gras Snackle Box featuring Chocolate Peanut Butter Hummus

It’s our favorite time of the year down here in New Orleans: Mardi Gras! Today, we’ll be making a Mardi Gras snackle box, full of delicious and nutritious treats for you and your family to enjoy out on the parade route. Snackle boxes are a fun way to pack a variety of healthy treats and snacks.
Our main treat we’ll be making for our snackle box today is a delicious chocolate peanut butter hummus! This protein packed treat is full of fiber, Vitamin E, Iron, B vitamins, and magnesium to keep you full and energized while walking the parade routes and catching all the beads!
Here’s what you’ll need to make our chocolate peanut butter hummus:
- 1 (15 oz) can chickpeas/garbanzo beans
- 1/3 cup peanut butter
- 1/3 cup maple syrup
- ¼ cup cocoa powder
- ¾ tsp vanilla extract
- 1/8 tsp sea salt
- 2-3 tbsp water
You can pair this sweet hummus treat with strawberries, bananas, apples, pretzels, or graham crackers. Don’t forget to grab a bento box or tackle box to serve your hummus and snacks in!
Directions:
- Microwave undrained chickpeas in a microwave safe mixing bowl for 4-5 minutes or until softened.
- Strain the chickpeas and add them to a food processor. Then, add peanut butter, maple syrup, cocoa powder, vanilla, and salt.
- Process until smooth and scrape the sides if needed. When the mixture is mainly smooth, continue to run the processor and add 2-3 tablespoons of water until you reach your desired consistency.
- Feel free to adjust to your taste buds by adding more peanut butter, cocoa, or maple syrup.
- Serve with sliced fruit, pretzels, put it on toast, or just grab a spoon and enjoy. Feel free to add some more goodies to your snackle box so that you can stay fueled all day!
