Wellthy Tastings May – Strawberry Harvest Salad

Did you know that May is National Strawberry Month AND National Salad Month?! Louisiana is lucky to grow some of the most delicious strawberries. Adding strawberries into your meals is sure to brighten things up and add a good source of vitamin C. Today, we’re going to celebrate National Strawberry Month and National Salad Month by making a yummy Strawberry Harvest Salad!
Here’s what you’ll need for the salad:
- 3/4 cup roasted walnuts, or granola (see April’s recipe)
- 1/2 small red onion, thinly sliced
- 10 ounces fresh baby spinach
- 1-quart strawberries, quartered
- 3/4 cup crumbled feta cheese
As an added bonus, we’ll be making our own dressing! Making salad dressing allows you to have more control over the flavor, sugar, fat and salt content, as well as helps save money.
Here’s what you’ll need for my poppy seed dressing:
- 1/4 cup balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons poppy seeds
- 1 1/2 tablespoons honey
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon black pepper
Directions:
- To prepare the dressing, all you have to do is whisk together the salad dressing ingredients in a small bowl until they’re well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
- To assemble the salad, place the spinach in a great big serving bowl. Add the strawberries, red onion, feta and walnuts. You can even add granola, check out April’s Wellthy Tastings segment for my homemade granola recipe. Dress the salad lightly with your homemade dressing and toss to combine. Serve immediately, with extra dressing on the side as desired.
