Wellthy Tastings February – Egg bites

What better way to start your day than with a delicious and nutritious breakfast. Today, we’ll be showing you how to make egg bites that you go take on the go or to the parade route this Mardi Gras season! Let the good times roll!

Here’s what you’ll need:

  • 2 tablespoon Cooked Bacon bits, crumbled
  • 1 cup Cherry tomatoes, quartered
  • 1 small yellow onion, diced
  • 1 cup Baby spinach
  • Mozzarella cheese, shredded
  • Cooking spray
  • 8 eggs
  • ½ c milk of choice
  • Variation: Left Over Roasted Vegetables

Directions:

  • Preheat the oven temperature to 350 degrees F. Lightly spray muffin tin with nonstick cooking spray.
  • In a large mixing bowl, beat the eggs together with the milk. Season with pepper
  • Pour egg mixture to fill about half to three-fourths the tin and add your vegetables and cheese.
  • Bake your bites for 15 to 17 minutes, until the bites center no longer jiggles when you shake the pan. Remove from the oven and sprinkle with fresh parsley. Serve warm.

Keep in an airtight container to eat for the next few days, or individually wrap your bites and throw them in labelled freezer bag for later. Reheat in the microwave on 15 second increments until warm, or in the oven on 350 for 5-10 minutes.

BLT Bites:

  • 2-3 slices Cooked Bacon, crumbled
  • 1 cup Cherry tomatoes, quartered
  • 1 small yellow onion diced
  • 1 cup Baby spinach
  • Mozzarella cheese, shredded
  • Fill a lightly sprayed muffin tin with tomatoes, spinach, and egg mixture. Season with pepper and top with bacon bits and cheese. Bake at 350 for 15-17 minutes.

Veggie Power Bites:

  • 1 small onion, diced
  • 1 bell pepper, diced
  • 8 oz mushroom, diced
  • 1 cup Cherry tomatoes, quartered
  • 1 small head Broccoli, florets
  • Pepper Jack Cheese, shredded
  • Fill a lightly sprayed muffin tin with vegetables of choice and egg mixture. Season with pepper and top with cheese. Bake at 350 for 15-17 minutes.
