Saints-Inspired Healthy Snacks

Win or lose, the Saints are still our boys! Here are some Saints inspired healthy snacks from West Jefferson Medical Center dietitian, Devin Brittain. Whether you enjoy these for the Superbowl, or just as a Saturday afternoon snack to fuel you for the rest of the day, these are quick and easy recipes that incorporate fruit, vegetables, protein, and whole grains. Enjoy!
Mike Thomas’ English muffin Pizzas
Prep: 15 minutes
Servings: 1 dozen little pizzas
Ingredients:
- 1 Package Thomas’s 100% Whole Wheat English Muffins
- Jar of pizza sauce
- 2 cups shredded mozzarella
- Choice of toppings: bell peppers, onion, mushrooms, olives, etc.
Directions
- Preheat oven to 400 degrees.
- Split Whole Wheat English Muffins in half.
- Spread about 2 Tablespoons of pizza sauce on each slice.
- Top with cheese and preferred toppings.
- Bake on Cookie Sheet in oven for 8-10 minutes.
- Serve and Enjoy!
Ingram’s Grahams
Prep: 15 minutes
Ingredients:
- Graham Crackers, halved
- 1 cup peanut butter
- ½ cup semi sweet or dark chocolate chips
- 1 Teaspoon canola oil
- Banana, sliced
Directions:
- In a microwave safe bowl, melt the chocolate by adding the canola oil and heating at half power, in 30 second increments and stirring in between each increment until melted.
- Add the peanut butter and mix until combined.
- On the graham crackers, spread the peanut butter chocolate spread and top with bananas.
- Serve and Enjoy!

Devin Brittain is a Registered Dietitian and Licensed Dietitian Nutritionist in the state of Louisiana. Born and raised in California, Devin obtained her Bachelors of Science in Food and Nutritional Sciences with an emphasis in Dietetics and Food Administration from California State University, Fresno. She then moved to Louisiana and completed her Dietetic Internship at Tulane’s School of Public Health and Tropical Medicine. Devin is currently the Outpatient Dietitian for the Cancer Center at West Jefferson Medical Center where she assists patients and teaches healthy cooking classes. She is serving on the board for the New Orleans Dietetic Association where she strongly advocates for the dietetic profession and the health of her community. In her free time, Devin enjoys attending festivals, reading, developing recipes, dancing, and cheering on the Saints! She is passionate about utilizing her food and nutrition knowledge to benefit others and believes in finding innovative ways to encourage a healthy lifestyle that works for each individual.
